Sunday Dinner Tacos

I had left-over mashed potatoes and roast beef from Sunday dinner in my fridge next to a bag of corn tortillas and a container of pinto beans, and I suddenly remembered how my friend Donna Bowman made the yummiest tacos ever for her family. I made some today for myself for lunch and dinner.

They are still yummy. The only difference is that I didn't fry my tortillas. I just warmed each side in a hot, dry skillet so they wouldn't break. Then I spread some mashed potatoes on one side, added pinto beans, finely chopped roast beef, cheese, and salsa. The mashed potatoes keep everything from falling out.

And that reminds me of one of my favorite foods I ate while living in rural central Mexico ages ago: mashed potato tacos with green salsa. That's when I learned to love corn tortillas and tomatillos. I also learned that you can put just about anything in a tortilla and call it a taco.

Back to Sunday dinner tacos: The only thing I would have added was some shredded lettuce. And a dab of plain yogurt. Yum. Just writing this makes me want to go have another one.
